The Menù

 

Opening the menu of Primo Osteria you perceive a clarity of intent expressed precisely by the mental order and the rigor with which the dishes are displayed. The menu is therefore divided by titles and starts with vegetable elements, Neither meat nor fish : Crispy egg in pochè, parmesan and truffle, Tempura of seasonal vegetables, mayonnaise with basil and sweet and sour sauce, Stuffed eggplant, Milk gnocchi goat curdled, caramelized red onion cream and crunchy cabbage. Afterwards, the Crudis are introduced , this time with both meat and fish, and again the Plateau ; finally, other dishes that are mentioned by type of preparation and technique. Then, you have the Marinades, as in the case of Mackerel, Salmon Carpaccio and Duck Breast Millefoglie or Low Temperature Cooking with Fillet Wellington, Stuffed Chicken Leg, Suckling Pig Belly, Stuffed Squid, Crispy Octopus and the Tuna in cooking oil. The first are divided between fresh pasta both water and flour based and egg shapes; the dry pasta they use is from the Lazio Lagano company with which they season the inevitable Romans such as “His Majesty” Carbonara, an unmissable dish if you eat at Primo which is wrapped in a creamy spaghetti, the Amatriciana with sleeves, while the bucatini are for the Gricia di mare with octopus. The other carbohydrates are found in the name Ricewith the risotto version of rocket, walnut pesto and spicy provolone fondue or in saffron saffron rice, sea urchins and gremolada. It ends in Dolcezza with Sferamisù, Banana, peanuts and salted caramel, Marron Glacé, Bronte pistachio and orange puffs and Primo’s Magnum. Note of merit for the preparation of the homemade leavened products that accompany the meal: a cereal loaf, several slices of a loaf, and in the bread basket also home-made crackers arrive still warm.

The wine list has about 60 labels and the division is not by type but follows the geographical origin of the vines and the names of the producers.

Furthermore, if there was no unanimity when ordering, Primo Osteria offers its diners the opportunity to try different tasting menus even at the same table: 3 courses (30 €), 4 courses (45 €), 7 courses (€ 60).
